SUNNY SIDE EGG AND ASPARAGUS SANDWICH


  • 1 large egg
  • 1 slice of Caraway rye, or other rye bread
  • 3-5 asparagus stalks
  • black pepper, garlic salt (optional)
  • butter (so NOT optional ;))

Directions:

  1. Steam asparagus lightly until bright green and tender, but not “mush”.
  2. Cook egg sunny-side-up.
  3. Butter bread.
  4. Assemble the sandwich.

 

EGG SANDWICH WITH BALSAMIC MUSHROOMS AND ONIONS


Ingredients:

  • 2 slices of whole wheat bread
  • 2 whole eggs
  • 1/4 cup of button mushrooms, sliced
  • 1/4 cup of onion, sliced
  • pinch of garlic powder
  • pinch of dried thyme
  • 1 tbsp. of balsamic vinegar
  • parsley, salt, and pepper (to taste)

Directions:

  1. Heat a skillet on high heat. Place onions, garlic powder, spices, balsamic vinegar, and mushrooms in the skillet with olive oil and cook until tender.
  2. Toast bread in the toaster.
  3. Fry the eggs until they’re over-easy (yolk is runny, whites are solid).
  4. Smother the bread with the mushroom-onion mixture, and top each slice of bread with 1 egg.

 

Strawberry-Banana-Vanilla-Peanut Butter Protein Creamwiches: (Epic long title, ftw?)

INGREDIENTS:

  • 2 slices of whole wheat bread
  • 1 banana, sliced
  • 2 tbsp. of strawberry cream cheese
  • 1 tbsp. of peanut butter
  • 1 scoop of vanilla protein powder
  • peanuts, chopped (optional)

DIRECTIONS:

  1. Mix together the peanut butter and protein powder with enough water to make a spreadable consistency.
  2. Layer the protein powder spread with the cream cheese and banana slices. Top with a sprinkle of chopped peanuts, if desired.
