BANANA OMELET


Ingredients:

  • 1 banana
  • 2 whole eggs (or 4 egg whites)
  • 1 tbsp. of milk
  • pinch of cinnamon

Directions:

1) Mash 1/2 of the banana with the eggs, cinnamon, and milk, and beat until light and fluffy.

2) Pour mixture into a heated, greased skillet, and cook over medium-low heat. When the eggs are almost set, place the rest of the banana (sliced) onto one side, and top with peanut butter (optional). Flip the opposite side over like you would with a regular omelet.

3) Top with chocolate sauce, if you want. (Tastes pretty epic ;))

“PIZZA IN A PAN”

Ingredients:

  • 1 whole egg
  • 3 egg whites
  • 1 tbsp. of psyllium husk
  • 2 tbsp. of pizza sauce
  • 2-4 tbsp. of  mozarella cheese, grated
  • salt and pepper (to taste)
  • Italian seasoning
  • Your favorite pizza toppings (green pepper, mushroom, onion, ground meat, ham, etc.)

Directions:

1) Spray a skillet with non-stick cooking spray. Throw in whatever toppings you’d like for your omelet, and cook until tender-crisp.

2) Beat together the egg, egg whites, psyllium husk, salt, pepper, and seasonings.

3) Clean the frying pan, and spray it again with cooking spray. Add the egg mixture. When the eggs are almost set, spread the tomato sauce over the top. Sprinkle it with cheese, and then add your toppings.

4) Place a lid on the skillet and cook the “pizza” for another 1-2 minutes, or until all the cheese is melted.

CINNAMON APPLE OMELET

Ingredients:

  • 1 whole egg
  • 3 egg whites
  • 1/2 apple , peeled and thinly sliced
  • 1 tbsp. of fat-free cream cheese, softened
  • 1 tbsp. of skim milk
  • stevia (adjust as needed)
  • 1/2 tsp. of cinnamon

Directions:

1) Beat the eggs with the skim milk until light and fluffy.

2) Spray a skillet with non-stick cooking spray. When it’s heated up, throw in the apples, sweetener of choice, and cinnamon, and cook until tender.

3) Clean the pan off with a paper towel, and spray it with non-stick cooking spray. Add the eggs with another dash of cinnamon, if desired, and cook it like a regular omelet. In the center of the open omelet, spread the cream cheese and top it with the apple mixture. Flip over one side of the omelet when it’s almost cooked through.

MAPLE PEANUT BUTTER OMELET

Ingredients:

  • 4 egg whites
  • 2 tbsp. of peanut butter
  • 1 tsp. of vanilla
  • stevia (adjust to taste)
  • dash of cinnamon
  • 1-2 tbsp. of sugar-free maple syrup (or natural maple syrup)

Directions:

1) Whip the egg whites with the cinnamon, vanilla, and sweetener until light and fluffy.

2) Spray a skillet with non-stick cooking spray. Add the mixture like you would for an omelet. When the egg whites are almost set, spread the peanut butter in the center, and then flip over like an omelet.

3) Top with sugar-free maple syrup.
